Spinach Bacon Quiche Recipe

How many people sent their husbands grocery shopping while in quarantine? Me! Guilty over here. My husband was considered an essential worker. While my daughter and I were distancing ourselves from others and staying at home I would ask him to stop at the grocery store on his way home from work. One week in particular spinach made the grocery list, and the husband brought home a Costco size bag of spinach, for three people. I had to think up some quick ways to use fresh baby spinach. My quick thinking produced the Spinach Bacon Quiche recipe, and I could not be more pleased. Thank you husband and Costco for allowing us to over indulge in spinach!

How do you make a pie crust?

I made my pie crust from scratch. Being at home and social distancing, I had ample time on my hands. This recipe is the easiest pie crust recipe I have found and it came out perfectly.

If you don’t have the time or the patience to work with dough, a pre-made pie crust in the frozen food section of your local grocery store will be sufficient.

What’s your favorite cheese?

During the Whole30s that I have completed the one thing I always miss the most is cheese. I love cheese, blue cheese, cheddar cheese, feta cheese, gouda, pepper jack, goat cheese, and many more. I have yet to find a cheese that I do not like.

When it comes to cheese in this quiche recipe I have experimented with so many different combinations. The best results have come from stringy cheese, such as swiss, cheddar, monterey, gouda, colby or pepper jack. So, have at it, pick the cheese your heart desires!

What milk gives the best results?

The best flavor and texture comes from a recipe complete with full fat or 2% cows milk. If you are trying to limit the amount a dairy used, I have used coconut milk before, in a pinch. Surprisingly enough, it actually turned out quite well. On the other hand I have also substituted with almond milk in a pinch, and it changed the texture of the the quiche, not to my liking.

Spinach Bacon Quiche Recipe

Ingredients

  • 1 9 inch pie crust
  • 6 oz chopped bacon
  • 1 onion small
  • 6 oz fresh baby spinach stems removed
  • 1 1/2 cup shredded cheese cheddar, monterey jack, pepper jack etc.
  • 5 eggs large
  • 1 1/4 cup milk
  • 1 tbsp flour
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • pinch of ground nutmeg
  • ground black pepper

Instructions

  • Preheat oven to 375 degrees.
  • Cook bacon in large skillet until brown. Add in onion and cook until translucent. Next add in fresh baby spinach, cook until wilted.
  • In separate mixing bowl combine eggs, milk, flour, salt, nutmeg and pepper, whisk together.
  • Place spinach and bacon mixture into pie crust, sprinkle desired cheese. Pour in egg mixture. Then sprinkle again with desired cheese.
  • Bake in oven for 45 – 50 minutes, or until pie middle is no longer loose and jiggles when pie is moved.
