Cranberry Apple Casserole

I love the holiday season, and by holidays I mean Halloween through New Year’s Day. It is my favorite time of year. I find the older that I get the more I try to recreate some of my childhood traditions. The good thing for you guys most of those traditions created around food. This Cranberry and Apple Casserole hits the top of the tradition list. To this day my family makes two Cranberry and Apple Casseroles to get everyone through one Thanksgiving dinner. The Cranberry Orange Loaf recipe is another recipe that made the family tradition list.

This recipe it is cheap to make and easy to throw together, and lets not forget delightfully delicious. Cranberry and Apple Casserole is my go-to dish to bring to any holiday event. I always receive a million compliments and no leftovers.

Prepping Fruit

Go ahead and preheat your oven to 350 degrees and grab a 9 x 13 baking dish. Coat your baking dish with a nonstick spray (just to be safe), then we can start prepping fruit.

The most time consuming part to this recipe is the apples. I prefer to get that out of my way first. Peel then slice (in that order, trust me 🙂 roughly 4 medium sized Granny Smith apples. Then spread the peeled apples slices over the bottom on the baking dish.

Next, drain your can of crushed pineapple. Please do not forget this step, I am speaking from experience, you will end up with cranberry soup instead of Cranberry and Apple Casserole. Once your pineapple is drained, spread the entire can over the apples in your baking dish. Then sprinkle the cranberries over the apple and pineapple.

Topping Things Off

Now we get to add the sweet, crunchy, buttery, deliciousness to the oh so yummy fruit 🙂 In a small bowl, go ahead and melt the butter stick in the microwave. Whisk together the flour, sugars, oatmeal, and nuts in a separate small bowl. Then sprinkle flour and sugar mixture over the apples, pineapple, and cranberries.

Now drizzle that melted butter on top and pop that casserole in your preheated oven. Let the Cranberry and Apple Casserole bake about 30 minutes, you will notice it is finished when you see the fruit juices bubbling. Serve with you favorite holiday meal.

Cranberry and Apple Casserole

Ingredients

  • 6 granny smith apples peeled, cored, and sliced
  • 2 cups cranberries washed
  • 1 can crushed pineapple 20 oz, drained
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 cup oatmeal
  • 1 cup pecans or walnuts
  • 1/2 cup butter melted

Instructions

  • Preheat oven to 350. Coated 9 x 13 baking dish with nonstick spray.
  • Layer apples, cranberries, and drained pineapple in baking dish.
  • In separate bowl combine sugars, flour, cinnamon, oatmeal, and nuts, mix well. Sprinkle topping over apples, cranberries, and pineapple.
  • Pour melted butter over topping.
  • Bake at 350 degrees for 30 minutes.
