Around here we are most definitely stress eaters. After my husband Duane and I come home from our long day at work we do not always want what is meal-planned for dinner. At that point in our day we are looking for delicious comforting food that is easy. One of our go to comfort food dinners is breakfast for dinner. We will cook up some bacon and hash browns in quick second. I like to pair our meals with some type of fruit or vegetable, even on comfort food nights. These Paleo Cinnamon Fried Apples hit the spot. They are easy to cook, and sweetly satisfying.

What kind of apples to use?

Honestly, I use whatever apples on hand, which is usually Gala or Honeycrisp. My family is crazy picky about apples textures. If I pick up a bag of apples from the store that are not crispy enough for them, they won’t eat them. Once the family rejects the apples I will use the apples in my cooking. Here are a few types of apples that are recommended for baking and cooking:

Benefits of Grade A Maple Syrup

I never thought I would use Maple Syrup as a sweetener in my cooking. In fact I have a love/ hate relationship with syrup. I love it on my pancakes or waffles, but I hate the smell of it. I feel like if I eat pancakes or waffles in the morning the smell will linger around me all day.

Paleo Cinnamon Fried Apples

Prep Time:5 minutes
Cook Time:10 minutes

Ingredients

  • 1 tbsp coconut oil
  • 3 cups chopped apples
  • 1/4 cup water
  • 1/8 tsp salt
  • 1/4 tsp pure vanilla extract
  • 1 tbsp pure maple syrup, grade a
  • 1/2 tsp ground cinnamon

Instructions

  • Heat medium sized frying pan to a medium low heat and melt coconut oil. Add apples and coat them in melted coconut oil.
  • Pour in water and sprinkle with salt, cover and let apples simmer for 3 to 5 minutes, until soft.
  • Once apples are soft uncover and add in vanilla extract, maple syrup, and cinnamon, Mix well until apples are coated. Cover and reduce heat to a low simmer for another 3 minutes.
  • Serve warm!
