Heat medium sized frying pan to a medium low heat and melt coconut oil. Add apples and coat them in melted coconut oil.
Pour in water and sprinkle with salt, cover and let apples simmer for 3 to 5 minutes, until soft.
Once apples are soft uncover and add in vanilla extract, maple syrup, and cinnamon, Mix well until apples are coated. Cover and reduce heat to a low simmer for another 3 minutes.
