Paleo Apple Ginger Coleslaw Recipe

- 2 apples
- 1/2 head cabbage medium sized
- 1/2 red onion medium sized
- 2 carrots
- 1/2 cup mayo compliant
- 1 tbsp lemon jucie
- 1 tbsp pure maple syrup
- 2 tbsp apple cider vinegar
- 1 tsp ginger fresh, grated
- 2 tbsp dijon mustard
Slice up cabbage, carrots, apples, and onions. Add sliced produce into large bowl and toss with lemon juice until well mixed.
In a small separate bowl add compliant mayo, maple syrup, apple cider vinegar, ginger, and dijon mustard. Mix well.
Pour mayo dressing over shredded produce, and toss until well coated.
Let coleslaw chill for 30 minutes to an hour in the refrigerator before serving.
