Easy No Box Brownies
We are a family that loves our desserts and quite often we find ourselves hunting down sweet goodies in the pantry. Like many, we also try to limit our sugar in-take and I do not keep many processed sugary foods in our house. On occasion and in moderation we like to indulge and enjoy a sweet treat. These No Box Brownies are perfect addition to a night of family fun. This recipe is quickly thrown together with common ingredients found in your kitchen. I have also used this recipe on occasion when I remember I need to supply a sweet treat at school or work the next day. Who has the time to run the grocery store on a weekday? No Box Brownies it is!

- baking powder
- salt
- butter (melted)
- sugar
- eggs
- vanilla
- chocolate chips
- cocoa powder
What is the easiest way to melt chocolate?
I find the easiest way to melt chocolate chips is to place them into a microwave safe bowl and microwave in 20 second intervals. Between each interval stir the chocolate until chocolate is smooth and chunk free.
Another way to melt chocolate chips is to use a double boiler. If you do not own a double boiler, you can also use a glass bowl. Use a small pot to boil water. Pour chocolate chips in a glass bowl that can sit on top of pot with boiling water (like a double boiler). Then allow heat from boiling water to gradually melt chocolate. Do not leave chocolate, stir frequently until it is a smooth consistency.

- Caramel, Fudge, or Peanut Butter Drizzle
How should I store leftovers?
If you end up with leftovers, you are doing better than me 🙂 Just kidding, we also have leftover brownies but that don’t make it past breakfast the next day. Did you not know a brownie and coffee is the best way to start your day?
We store leftovers in a large gallon size Ziploc bag or a Snapware container and leave them on the counter at room temperature. Our leftover brownies barely make it 12 hours but if you have better self control then we do here, they can last 2 to 3 days.
No Box Brownie Recipe

- 3/4 cup flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup butter melted
- 1 1/2 cups sugar
- 2 eggs
- 2 tsp vanilla
- 1/2 cup chocolate chips melted
- 1/4 cup cocoa powder
- 1 cup chocolate chips optional
Instructions
- Preheat oven to 350 degrees. Grease 9 x 9 pan.
- Whisk together, flour, cocoa powder, salt and baking powder. Set aside.
- In separate bowl mix together melted butter and sugar until smooth.
- Whisk in eggs and vanilla to butter mixture until well combined. Then mix in melted chocolate until well combined and smooth.
- Add flour mixture to melted chocolate mixture and mix well.
- Pour brownie batter in 9 x 9 baking pan.
- Bake brownies for 30 minutes or until toothpick inserted in the middle comes out clean. Let cool before digging in.
